This recipe uses fresh soy beans and naturally occurring mold.
Ingredients
16 oz organic, high-quality soy beans
12 oz all-purpose flour
16 T salt
1 gallon +3 cups water
Steps
Step 1
Using FRESH soy beans, pour 3 cups of fresh water into a pot, add beans and bring to a boil. Reduce heat and simmer for 90 minutes or until tender. Beans will be partially coming out of their pods.
Step 2
Drain and put soy beans in a food processor. Blend to a paste.
Step 3
Pour beans into a bowl and add flour. Mix until a dough forms.
Step 4
Form into a log and cut into 1/4 inch thick slices. Place pieces on a moist paper towel and cover with another wet paper towel. Cover in cling wrap and put out of the way for 7 days or until mold covers the discs.
Step 5
Unwrap discs and arrange on a baking sheet. Space them apart so they are not touching. Place in sunlight and allow them to dry and turn brown.
Take a large pot or a food safe plastic bucket, add the remaining water and salt. Mix well. Add the soybean discs and cover. Stir daily for six months to allow the discs to dissolve completely.
