Grits from scratch – no store purchased stuff here!
Can be kept in the refrigerator for up to 4 days (yeah, right!)
Ingredients
1 cup ground corn (Raw corn fresh off the cob)
3 cups water
3 cups milk or cream
Steps
Step 1
Grind corn to a rough texture. Do not overgrind (and never use those instant grits from the store)
Step 2
In a heavy pot, combine ground corn (grits), water and milk. Bring to a boil. Begin whisking the grits into the liquid, switching to a spatula as the grits begin to thicken. Be sure to scrape the bottom of the pot frequently as the grits tend to collect there and will burn. Add more milk if it gets too thick. If it looks gritty or the edges start to look dark, you definitely need more.
Step 3
Reduce heat to low. Cook partially covered for about 30 minutes, stirring every 5-10 minutes.
