Pizzelle are traditional Italian waffle cookies made from flour, eggs, sugar, butter or vegetable oil, and flavoring. Pizzelle can be hard and crisp or soft and chewy depending on the ingredients and method of preparation. It can be moulded into various shapes, including in the shape of cannoli.
Whisk together the eggs, sugar, milk, melted butter and vanilla until smooth.
Use a sifter to add the flour and baking powder to the batter. Mix the batter until it is smooth and there are no lumps.
Lightly brush the pizzelle iron with shortening. Allow to heat for 5 minutes.
Drop by tablespoon in the center of the iron and cook for 1-1/2 minutes. Remove from iron with a wooden skewer.
NOTE: All irons are not equal so test the times on what you are using.
